pH is the measure of acidity or alkalinity of a food.  pH is a very important value that can be used to control the growth of harmful microorganisms (called pathogens) as well as spoilage microorganisms.  Here is a link to the pH Values of Various Foods.  It is especially important to know the pH of a food if you are manufacturing acidified foods. ​​​
